2 pounds sausage
	5 pounds potatoes, peeled and cut in chunks
	1 bell pepper, chopped
	2 onions, chopped
	3 ribs celery, chopped
	Creole Seasoning
	Chop sausage into 1/2 inch slices and brown in a Dutch oven on 
	medium heat.  Add potatoes, and chopped vegetables.  Sauté  
	until light brown.  Add 1 inch of water, reduce heat and simmer 
	about 20 minutes.  Allow potatoes to begin to break apart to thicken gravy.  
	Add Creole Seasoning.  
	Yields 8 servings.
