2 Bean Bowl
	Make this delicious bowl when you want a delicious dinner fast. 
	It is perfect for busy days and brings the flavor of the garden inside.
	1 tsp olive oil
	3 strips turkey bacon, sliced in thin strips
	1/2 cup chopped red onion
	3/4 cup broth
	1 cup fresh green beans, trimmed
	1 cup frozen lima beans
	1 yellow squash, sliced
	3 ripe tomatoes, cored and diced
	3 cups cooked brown rice*
	2 Tbsp flavored vinegar
	1 tsp diced oregano
	black pepper to taste
	Heat a large nonstick skillet over medium high heat and add the 
	olive oil. Add the turkey bacon and cook until golden. Add the red 
	onion and saute for 2 minutes. Add the broth, beans and squash and 
	cook until crisp-tender, about 3-4 minutes. Add more broth if needed. 
	Add the rest of the ingredients and stir well to reheat. Serve hot.
	*Speed tip - use instant brown rice. You need approximately 1-1/2 cups 
	of instant brown rice and 1-1/2 cups water for 3 cups cooked or use 1 
	cup regular brown rice and 2 cups water. Follow package directions for 
	cooking times.
	Serves 4. Each 2 cup serving: 297 calories, 4.5 g fat, <1 g saturated 
	fat, 8 mg cholesterol, 151 mg sodium, 55 g carbohydrate, 8 g fiber, 10 g 
	Diabetic exchange: 3 veg, 1 bread.
