Sausage and Rice
	1 pkg smoked sausage (spicier the better!) 
	1 1/2 cups rice (long grain is the best) 
	3-4 stalks celery
	1/4 cup parsley
	2 tsp cayenne pepper
	salt to taste
	3 cups water
	Slice sausage and chop celery put in medium sized pot. 
	Add rice, cayenne, parsley, salt (and hot sauce if you 
	like a little extra spice!). Bring to boil and then simmer 
	for 25-30 minutes, or until rice is done. 
	Makes about 2-4 servings.
