Broiled Chicken Breasts
	
	6 tbs soy sauce
	¼ cup water
	2 tbs vegetable or olive oil
	3 tbs fresh lemon juice
	¼ tsp freshly ground black pepper
	4 6oz chicken breasts, skinned and deboned
	
	Combine the soy, water, oil, lemon juice and black pepper 
	and whisk to combine. Pour the mixture into a shallow bowl 
	and add the chicken. Cover and refrigerate for one hour, 
	turning the chicken two or three times.
	
	Broil the breasts in a preheated boiler for eight to 10 minutes 
	on each side, or grill them for about the same time. The cooking 
	time will depend on the thickness of the breasts. Remove and serve 
	at once or at room temperature. They can be refrigerated for up to 
	three days.
	
	Serves four
