Mushrooms A La Grecque
	
	½ lb fresh mushrooms
	½ cup water
	1/3 cup extra-virgin olive oil
	Bouquet garni of fresh thyme, celery top and bay leaf
	½ tomato or 1 plum tomato, chopped
	Salt, pepper to taste
	12 to 15 coriander seeds
	
	Wipe the mushrooms clean and cut a thin slice from the stem. Halve or quarter 
	them, depending on size. Button mushrooms can be left whole.
	
	Bring all the other ingredients to a boil. Add the mushrooms and simmer for 
	about 10 minutes. Remove the mushrooms to a shallow dish.
	
	If the sauce is very liquid, boil it down a bit. Pour over the mushrooms and 
	chill very well.
