Smoked Turkey and Feta Wraps
2 ripe tomatoes, seeded and finely chopped
2-3 tbs minced red onion
1 tbs chopped fresh mint
2 tsp chopped fresh oregano
2 tbs lemon juice
1 tbs olive oil, extra virgin
4 lg flour tortillas (10 - 12 inch)
8 slices smoked deli Turkey (sliced thin)
4 lg soft lettuce leaves (green or red leaf, trimmed Romain)
4 oz feta cheese, crumbled
Coarsely ground black pepper to taste
Combine the tomatoes, onion, mint, oregano, lemon juice and olive
oil, set aside for 30 minutes to allow the flavors to blend.
For each wrapped sandwich, cover a tortilla with two slices of turkey,
leaving a small border at the top and bottom; then place a lettuce leaf
over one half of the turkey. Spoon about two tablespoons of the tomato
mixture onto the center of the leaf; then top wth one-fourth of the crumbled
feta and plenty of ground black pepper.
Fold the top and bottom of the tortilla over the fillings; then, beginning
on the side with the lettuce leaf, roll as tightly as possible (like a burrito)
to enclose the fillings securely. To serve, place seam side down on a plate and
cut in half crosswise.
