Thai Chicken Hamburger
	
	1½ punds lean ground chicken
	4 thin green onions, finely chopped
	2 tbs minced cilantro leaves
	1½ tbs finely minced fresh gingerroot
	1 medium clove garlic, peeled and finely chopped
	1 tsp grainy mustard
	½ to 1 tsp chili paste or chili oil
	2 large egg whites
	3/4 cup quick-cooking oats
	½ tsp salt
	Several grindings black pepper
	1 lime, cut into 6 wedges
	
	Combine the ground chicken, green onions, cilantro, ginger, garlic, 
	mustard, chili paste, egg whites, oats, salt and pepper. Form into 
	six burgers.
	
	In a large nonstick skillet, cook three burgers at a time for about 
	five minutes per side on medium heat. Check to make sure burgers are 
	cooked through before removing form the heat. Hold in a warm oven while 
	cooking the remaining burgers.
	
	Serve with a lime wedge
	
	Serves six
